Sight: High layer intense cherry color, edge with garnet tones. Clean and bright. Dense and deep tear.

Aromas: Complex and elegant nose where notes of red and black fruit stand out such as blackberry, raspberry, and black currant over spicy nuances (nutmeg, black pepper) accompanied at the end by subtle touches of fine leather and minerals like graphite or slate.

Taste: Dense mouth with great structure and very good balance. The final acidity and aromatic complexity contribute to its long persistence. Tempranillo with personality and elegance. Pairing with grilled red meats, stews with legumes and meat, rice dishes, cold cuts, and goat cheeses.

The aging of Cillar de Silos is the backbone of the winery because it reflects the character of Tempranillo in the lands of Quintana del Pidio. It is born from different terroirs, from small plots sometimes tiny in size from old vines. It stands out for its finesse.
Tasting notes
Color is intense cherry cherry with violet reflections
It mixes elegance with maturity. You can smell the aromas of sour black and red fruit (raspberries and ripe wild blackberries); sweet spices (nutmeg, cloves, vanilla); cedar; light roasts that disappear and licorice.
In the mouth it is fleshy, silky, balanced with good structure. It has a refreshing acidity that lengthens the wine, the ripe tannins still firm to polish. It is persistent and the same memories appear as in the nose.
Consumption and conservation
Lamb chops, pasta, meat (grilled, roasted or stewed), cheese...
At 14-15th, their virtues will stand out more because they will finish 17-18th.

Description
- Varieties: 94% Tinto fino, 4% Cabernet Sauvignon, 2% Merlot
- Production and aging: Grapes harvested by hand after thorough monitoring during their ripening cycle and after an initial selection in the vineyard. Passage through a cold chamber and selection table. Fermentation without prior crushing. The must was moved by gravity and fermented with its native yeasts from our estate. The wine was refined in French and American oak barrels for about 12 months.

View: Clean and bright, with intense cherry color and garnet hues. It presents dense tears.
Nose: Complex and elegant. It combines ripe black fruit (blackberry, cherry) with spices (pink pepper, nutmeg) and toasted notes of cocoa and noble woods.
Palate: Enveloping and fleshy entry. Sweet with round and polished tannins. Balanced, persistent, and with balsamic and menthol memories in the finish.

00 Monks, “Reserva”. Rioja Reserva wine is the result of a very careful selection of the best grapes and clusters to obtain a wine with exceptional potential, which retains all its aroma and splendor that have led to countless national and worldwide awards and recognitions.

Varieties: 85% Tempranillo, 10% Graciano, 5% Garnacha

Alcohol content: 14.50%

Vineyards: From vineyards with an average age exceeding 45 years.

Rioja Harvest: Handpicked in 15 kg boxes. Manual selection of clusters in vineyard and winery.

Elaboration: The selected clusters underwent mechanical destemming in a stainless steel sieve and gentle crushing using rubber rollers to break the grain. Fermented in “Allier” wooden vats for 11 days at a temperature between 24º and 28ºC, it remained in the presence of the skins for 20 more days, resulting in a structured wine with noble tannins that will lead to a long life of our wine.

Aging: Aged for 18 months in new French and American oak barrels, it remained in tanks for a few months before bottling, and then, before hitting the market, it rested for 18 months in our cellar.

TASTING NOTES:

Appearance: Cherry red color, garnet rim.

Aroma: Aroma of red fruits (cherry, raspberry). Very fine oak, coffee, chocolate.

Palate: Powerful, spicy, tasty, complex, balanced, long, and persistent.

It is recommended to uncork and decant about 30 minutes before serving, in order to fully appreciate its aromatic potential.
